Actually it was two butts. Last package at GFS they had on hand, so I even got it cheaper then 1.48 a pound. I won't complain about them knocking it down to 1.30 a pound.

I injected both after trimming and a SPOG rub, with roughly 6 ounces each Jalapeno Butter from Cajun Injector. I am still not a pro at this injector game. Thinking of actually just sprinkling marinade on the product post shredding in the future. But I can say when you hit a spot the marinade had been, you knew. Not to strong, but just enough to wake up the taste buds!

And this leads me to a question of should I try to do a different rub or injection marinade every month? I'm not sure how many reviews of the literally hundreds of rubs and marinades might exist.

PS: This was roughly pulled. I actually pulled it a bit early as I was getting tired, and the thing just didn't seem to be going past 190. Parts were easy to shred, some I didn't find so easy. Fortunately this stuff was largely meant to be used in taco nights and fried rice. It'll be reheated and pulled apart more any how!

I have to go dig around in my chest freezer know I still have some pulled pork butt out there.
Sounds confusing to have butt in your chest. Unless somebody is sitting on you.
Glad you got a great deal! I've seen some outrageously priced butt....
I'll leave you to chew on that for the moment...

Ya know, injecting butt is a learned thing. The more you poke, the better it goes.
I watched where a guy was poking about every 1 1/2".
Maybe that is a clue? Poke more, even if you're tired. Keep poking.

190 is a bit early tom. I won’t even give them a look until 198.

Jalapeño butter sounds good. I’m not a big injection guy with butts but yeah I’d assume there are thousands of flavor combos you can mix with pork.

Well the thing is, it had been 23 hours and in parts, it was 205f with ease! And I wasn't going to try and stay up for another 12 or some thing this time LOL.

Yah, Jalapeno butter is awesome, can't wait to make tacos with it!

I always like a bit of bite to taco meat, as does my father. And given right now I went and brushed my smoker off of -sleet- to put a cover on it, the heat is appreciated for the next 6 months here in WI! LOL
