Some day Bear, I will take good pictures I promise. I'll just let it ride along. It's a nice mahogany reddish hue. I'm trying to see if I oversmoke for my taste buds or not. I guess I should stick to my premise!

What do you usually shoot for barkwise? I always thought 'darn near burnt' looking was the only true way to do bark..


Your Pics are fine. It's just hard to tell how much bark is there looking at the whole roast.
Maybe a pic of some pulled, so you can see how thick it is in the pic.

Personally I'm happy without getting a hard thick bark. I just like a little to help with the overall flavor.

Well. I'll keep my mitts away from them then and just let it ride on at 250f till completion! I hope for a change the rub flavours help. Other wise, I'm declaring my taste buds broken! LOL! Thanks for chiming in Bear. <It also helps for a change I'm looking at stuff in the day light, not 11 PM..> LOL
 
Alright, I pulled them..one was reading 207f on internal, the bigger root beer one was reading 204f. Bones slid out fairly easily.

A bit of ....testing was required, that is to say, a few chunks consumed. I have to say I prefer the Creole garlic. I didn't use much marinade in either, maybe 6 ounces total of both root beer and creole. Diet Root Beer? Likely a bad plan. I think if I had gone to 10-12 ounces in the creole I would have really loved it. I didn't oversmoke these by a long shot. The Root Beer one is just sweet. I detect no heat from the rub, but I also haven't shredded it yet. I want to let it cool enough to use my hands to get a good shred and mix in more rub for both.
