A store near me that I've gotten CSRs from alot, like any time they have em on sale I go there, because they have an actual butcher department has their store ones on sale for 1.99 a pound. I've read here and there on doing this but they all use bbq sauce and hacking them up first.

I'm wondering if I could just do what I did for Pork Butt instead? That Jalapeno Honey Mustard, then the dry rub and smoke the hell out of them for hours? I was thinking of depending on size of the rib, cutting into 1/3 of 1/4th pieces so they're bit size but not small chunks. Then throwing them on at 230 or so for hours with apple wood.

Like how important is saucing them with bbq and putting a tray in for them? Can they just sit on the grates and smoke like a pork butt? That Jalapeno Honey Mustard I got made an awesome bark I think, and I basically want snack pieces of bark . I don't sauce them because not all of the house hold likes sauce, and I'd rather let people decide on how much they want on theirs. Also alot less messy to bag up for the freezer portions!
 
That should work but it wont be the same as burnt ends I dont think. Burnt ends are suppost to be saucy and bite sized and very tender.

Maybe try both ways and as always post it up so we can see.

Aha ... I don't think I've ever truly had burnt ends. I sort of thought the point of burnt ends was just basically pieces of bark!

I'm thinking that I should plan for maybe a 6 hour smoke? I'm guessing it'll be fall apart good well before pork butt. Think it'll still get that thick bark going on? I'm not worried about not saucing during the smoke because this Jalapeno Honey Mustard I buy is basically like an adhesive. I actually regretted buying it before I used it for meat on the grill etc. I can't tell there's any heat in it, but it's -very- good for honey mustard and doesn't add artificial sugar, just honey!
 
Think I need some guidance here ya'all..been sitting at 178 for 2 hours now, and at this point I'm getting worried I could end up like burning them or some thing. I was aiming for the temp of 185 but is that actually needed?
