I will preface this with I didn't let the bacon sit two days per Disco's instructions...or like, even a day at this point. But I wanted to do a lil fry test and my dog had taken over my bed when I got up to deal with the effects of one to many adult beverages. <I have also been asked by several people what I'd charge to do injected pork butt for them. I brought some samples down and I told them as a friend I can do it, but I can't do it for business purposes.>

So what to do when your dog takes over half the bed, your insomnia kicks in? Why slice two pieces off that back bacon and fry it up!

I do believe Al might have been right and I should have let it go longer. It's not as bacon like as I hoped. Faintly bacon..faintly ham. Maybe it's just that you don't get the bacon flavour with pork loin. I don't really know, but it tastes good. I have the pics of the process here but when I get around to a proper breakfast later when I take my meds I plan to do a back bacon scramble after seeing Bear's Spammy Scramble :)

That sounds to me like you got the back bacon (or Canadian bacon) flavor just about right. To my mind it doesn't really taste as "bacony" as a cured belly or side bacon. Good but just a little different.

I figured as much, but I was being hopeful! Still cheaper then buying Canadian bacon, which is all part of my goal. I just wish I lived in an area where pork belly was sold. I did pretty much determine I need to go to a butcher to get the UK stuff, as it is an untrimmed pork loin with some of the belly still attached. <Course that is cold smoked stuff too when it comes to rashers>.
