So got like two questions...went to a local farmer's market, and it was a bust, so I hit up the huge store in the area with a pretty big produce section and got 4 pounds of Jalapenos, and like 6 giant Poblanos.

Are Poblanos good for ABTs?

Also has any one stuffed and bacon wrapped the ABTs the day before the smoking just for ease of use? I'm tempted to do tonight instead of last minute. <Also then if needed I can get more bacon. I got two packages which I honestly think might not be enough>..

I'm just thinking I could put them on a cookie sheet and put wax paper over the top and put another layer on, but I don't want to end up with some weird flavour or some thing from sitting over night like that.
 
Stuffed Poblanos are to me always good as I enjoy those peppers. As for ABT's I only recently started doing them and have been a great hit. I have stuffed them the night before twice now to organize my time better, They can be a tedious project but well worth it. I found the ones I did stuff and bacon wrap ( with crab and cream cheese ) had a little bit of liquid in the pan the next day ( about a tablespoon) but still turned out great. With the amount you have to stuff I would do the night before. What are you going to stuff them with?
 
Just a blend of whipped cream cheese, regular, and shredded cheese. Then bacon wrap. I guess I'll go get them out of the way instead of doing them at the last minute.

I don't do any super fancy stuffing. I feel the cheese and pepper and bacon is good enough <also rich enough>
 
Smoked them Poblanos for a late supper..
