I'm looking for a brisket rub that'll make great bark with reduced pepper. I made a 50/50 kosher salt/course black pepper the last time I smoked. I thought the bark and taste were great, but my wife said it was too peppery. Does any one have a rub recipe that produce a great bark on a MES electric smoker that has less pepper in it? Some pepper is fine, but not 50%. She's also not a big fan of spicy foods. Thanks.

Just adjust your % a bit. Maybe try 25% black pepper and 25% granulated garlic to the 50% salt? Or 25% salt, pepper, garlic, onion combo. Adjust spices to your preferences. You can purchase Jeff's TX rub which is usually what I use on steaks, burgers & brisket.
 
I actually use very little pepper on my briskets. Believe it or not but 5 spice mixed with garlic, onion power, and smoked paprika with a splash of pepper makes a nice combination. Salt is in there to.
