Looks like a great meal for sure. I am like you on the use of TL, best cut off an elk for sure. I don't like to use it for anything other than my favorite way, which is very simple. However, my wife has no problem make various dishes using the TL and backstrap. I tend to get a tad bit upset when I catch her doing it but the meals always turn out great. I drew a cow tag this year, finally, and sure hope I can get one. We've been out of elk for a 3 years now, but we've been getting deer every year, so not a bad consolation.
