Hey all, had an elk tenderloin in the freezer that needed used up. It’s been so hot here we needed something different but refreshing!

Seasoned the tenderloin up a day ahead of time. Wasn’t planned that way… but it all worked out!

So, today smoked it up… pulled and chilled back down.

Sliced up the tenderloin and added as a topping for a salad!

Again, it’s been hot here, what a refreshing and tasty meal this was. So, here’s the Redneck Fajita Salad!

This will definitely be put in the rotation of summer meals. Won’t be elk tenderloin every meal… but we have a variety of wild game cuts we can use.

As my old buddy Foam would say…. We even used the fine china!

It’s been so hot here
Hot as heck here, too. Actual temps around 100℉ with the heat index around 120℉ for the last week or so. May get a break this coming weekend when the forecast highs are supposed to be in the upper 70s. We'll see...

Looks very nice Justin. I think that steak tossed salad is under used and under rated. It is very delicious and your elk tenderloin puts this dish way over the top. Nice work my friend.

Oh man Justin that looks good! I would trade my chicken Fajita's I did yesterday for that any day.

Keith, thanks buddy… appreciate that! I kinda hesitated using the TL for this… but the meal was tasty and not gonna lie… some slices didn’t make it to the salad topping! 🤷🏼‍♂️

Justin, Great idea for a hot day, that elk tenderloin looks phenomenal and goes well with the "fine china" !

Thanks CM! I hesitated using the TL for this, but glad I did. Was a tasty and cool down meal.

Ha, thank you… every time I use the fine china, I can’t help but thinking of Foam. He’s one of many that are missed here. Thanks for the like CM!

Now that’s WAY too hot for my old horizontally challenged redneck butt.

Now 70’s… I’d take that temp anytime! Appreciate the like as well.

Thanks Eric for the kind words bud… means a lot. I have to agree, and not sure why we personally haven’t done this for a few years. Steak… be it beef, elk, etc… is awesome! But this changed things up and as said… this will be in our summer meal rotation. Appreciate the like too.

I will be honest, I kinda hesitated using the elk TL for this meal… guess I’m some ways I am an old school redneck… kinda stuck in my ways of how a TL should be cooked… But I have to say, the decision was made and it really turned out to be a great meal.
