Redfish/crab Cakes...

Been a while since I have made these. I went fishing and the conditions were right. Falling tide after a period of slack tide so the fish were feeding. But with a WNW wind overnight, the wind blew the tide out farther than I expected. I only had a few hours to fish the flat before I lost too much water to float the boat. I made the best of it. Caught 4 redfish, could only keep one that was in the slot. Also caught a 20-22" black drum on a topwater.. only the second black drum I have ever caught on topwater. So with a keeper 24.5" redfish, and the black drum, plenty enough meat for crab cakes.

Did not take picks of the 3rd and 4th fish of the morning. a keeper 24.5" redfish and an undersized 16" redfish. The tide forced me to move, so I went to a low tide spot and soaked shrimp under a cork while I ate lunch. I caught catfish every cast. Kept most of those hardheads for garden fertilizer. Then I saw a big redfish cruise around the point. picked up my topwater bait and timed my delivery. He crushed it as I pulled the bait just in front of him...after a good fight, 30" redfish...

Been a long while since I have caught one that big on topwater. Always fun! Then the afternoon storms started building so I called the trip just after 1pm. Tide would stop at 3pm anyway so the fishing was about done for the day. Time to head home....

So good. The crab was super fresh with no fishy smell at all. Great meal! Served with a side salad and a nice French Sauvignon Blanc White wine.

All of it looks superb! But I gotta ask... Why cakes? Burnt out of running it blackened? That is the FIRST thing I am going to try when i visit.

So what is “soaked shrimp under a cork?” I assume you were somehow getting them nice and stinky for the catfish?
 
All of it looks superb! But I gotta ask... Why cakes? Burnt out of running it blackened? That is the FIRST thing I am going to try when i visit.
Yeah....burnt out on blackened. Plus the heavy char is not really all that healthy for ya. Nowadays, I do more of what we call bronzed redfish which is cooked the same way, but at a lower heat so you get hardly any of the black charring. And I mean...who doesn't like crab? LOL!!!

"Soaking a shrimp under a cork" is Cajun slang for fishing bait shrimp under a popping cork....letting it float along an oyster bed in the falling tide. You do catch some game fish, but mostly catfish...

Like this little Mobey Dick...LOL!

Nice catch ✔️. I grew up in Corpus Christi, Texas and we would catch redfish, drum and flounder often. In the late '60s I can't remember if there was a slot limit on redfish.
Thanks thirdeye. I doubt they had a slot back in the 60's as redfish was considered a trash fish back then from what I am told....

Cool recipe. I've done this with fresh shrimp diced up in small pieces but have never tried fish. On the list for sure.
