A bit late to the party but that's some fine looking sausage right there. Never used the Muslin bags but after seeing this I might just have to give them a try. Great job and thanks for posting.

Thanks Robert. Those bags are really nice. And like chopsaw chopsaw and BGKYSmoker BGKYSmoker idea, maybe soak them down before stuffing for easier removal.

Thank you, yes I did. It seems like the meat stayed a lot more moist, unless it was the lower temps I took it to instead if 160°. Will use again.

These bags can be packed a lot tighter without breakage and they seem to take on smoke a lot better I think.
