Wow, it turned out great!
I had the same issues with the Cabelas stuff. I have slowly been picking up commercial grade at restaurant auctions.

I ordered some Red Barn from Owens. Gonna do some venison smoked ring sausage soon. Have his Garlic Summer Sausage seasoning. May try that style of bags. Better than the fibrous in your opinion?
smokin peachey smokin peachey is more qualified to answer than I.
 
For the ones that asked about the bags. They are thin cloth bags. You can stuff then very tight and the smoke comes through great. You can almost see through them. I love using them.

If you are looking to make ring bologna the muslin bags from the link I posted won’t be long enough to make a ring. They work for tube/chub style. I like the cloth better than fibrous casings.

A word to the wise, get a refund on that mixer. Take the money get a 10A (or more powerful) corded drill with 1/2 inch chuck, a big 46 inch long sheet rock mud mixer, a big cooler, and rig yourself up a hassle free and easy to clean meat mixing setup lol

You might have to get clever to keep the cooler from moving around on you as you mix but I'm sure you can rig up some kind of foot that you step on to keep the cooler from moving.

I too once had a mixer like the one u have and quickly moved away from the piece of junk to a setup like the one I mention and wow it is SOOOOO much better!

Actually one of the members here archeryrob archeryrob seems to have made a blog post online about doing such a thing with buckets (my setup takes the same bucket approach). I just now found the post looking for example images online lol Good work rob!

they kind of stick but are easy to pull once started and came off clean.

dont think I can get a refund as the mixer is about 12-13 years old. how many pounds will that bucket mix at once?

I do about 10 pounds at a time because I dont want to over work the drill. If u go slower u can do 15 pounds. If using a rectangular cooler u could mabe do 20 pounds or more at a time since u are working left to right where the bucket is working more up and down so the drill has to fight through all the weight which wouldnt be so true in a rectanuglar cooler .
