Hey all,

I'm currently looking for a KC style BBQ sauce or a Texas style sauce that is good on both pork and beef. I have plenty of the vinegar based and Carolina style sauces but I need something that is a bit thicker and has a bit more kick. Anything you guys have would be a great help!! Thanks!!
 
Here you go...I keep these in my recipe catalog just in case.

Kansas City Style BBQ Sauce:

3 cups ketchup

2/3 cup dark brown sugar

½ cup water

½ cup white wine vinegar

½ cup tomato paste

2 tbsp yellow mustard

2 tbsp chile powder

1 tbsp freshly ground pepper

1 tsp salt

1 tsp granulated onion powder

1 tsp granulated garlic powder

½ tsp ground ginger

½ tsp cayenne or chipotle

Mix all ingredients together and simmer for 30 minutes over low heat.

Texas Style Barbecue Sauce:

¼ - lb butter or margarine

1 cup vinegar

1 cup water

½ cup tomato ketchup

2 tsp Worcestershire sauce

1 tsp dry mustard

2 tsp chili powder

¼ tsp cayenne

1 tsp black pepper

1 tsp salt

¼ cup sugar

2 - crushed bay leaves

2 - cloves garlic, minced

1 - large onion, grated

Juice and zest of 1 lemon - always fresh!!!!

Mix all ingredients and simmer for 15 minutes over low heat.

Here is one that I haven't tasted..but its an All-Purpose Texas BBQ Sauce

1/2 cup flat beer

2 TBS Worcestershire sauce

1 TBS Black pepper

2 tsp garlic salt

1 tsp onion salt

1 tsp cayenne

Mix together in a nonreactive pan and bring to a boil.  Reduce the heat and simmer, stirring occasionally for about 1 hour.

Can simmer longer to make it thicker.

Can use this on anything from chickens to beef steaks.  Serve warm or cold.  As a glaze.....apply it about 30 minutes before the end of the cooking time.

Again...have not tried this one either you 2!  But here goes!

1/2 cup unsalted butter (1 stick)

4 cloves of garlic, pressed

1 cup minced onion

1 lemon, unpeeled, seeded and minced

1 bottle of ketchup (32 ounce)

1 cup tomato juice

1 cup V-8 juice

1 cup brown sugar, packed

1/2 cup molasses

1/2 cup Worcestershire sauce

1/4 cup chilli powder

1/4 cup white vinegar

2 TBS black pepper

1 tsp salt

Melt the butter over medium heat. add the garlic, onions and lemon, saute until the onion is tender but not brown. About 4-5 minutes.  Add the remaining ingredients.  Bring the mixture to a boil.  Reduce heat and simmer for about an hour to hour and a half. Stir occasionally until it thickens.  Serve warm or cold.  Will keep for about 2 weeks in the fridge.  Glaze on chicken or ribs about 30 minutes before meats are done.   Great as a dipping sauce or on burgers.

Let me know what yall think about this one.  Hmm....lemon peels too?  Could be good tho!

Bill.....sure! Lynn is my food critic....he is picky and hates everything....except my red beans and rice. Know the "pain"! Lol

Hey PGSmoker64...made your KC style sauce for my last chopped pork picnic that I did. Loved it and my wife was all about it. Thanks for the recipe. I really appreciate the help.
 
Here is one I stole off a PBS TV show. America's Test Kitchen if my old brain serves me?

She likes it, I don't.  But I don't like sauces much, and especially sweet ones.

SWEET & STICKY  K.C. BBQ SAUCE

1 Onion, minced & sweated        ½ C Catsup
4 C Chix Broth                           ½ C Tomato Paste
½ C Molasses                             1 TBS? Hot Sauce
1 C Dark Corn Syrup                  1 tsp? Garlic Powder
1 C Apple Cider Vinegar             1 C Root Beer
2 TBS Brown Mustard

Simmer 1 to 1 ½  hour                
 

I like more savory, but the sweet and sticky lovers might like this one.
