Flash, here is what I did - works fine for me.

Included a pic of the other use I found for that hole in the lid. Smoke source for my "turbo" cheese smoker. It has a 12V fan that pulls smoke out of the ECB into the smoke box.

Interesting. How did you seal the metal probe into the lid?
Was the clip part of the probe or an added device?
 
It is not sealed, the hole is close to the diameter of the probe. It just sits there and does it's thing. The clip came with the thermometer. Got the thermometer at Wally World in the BBQ grill section. "Seasonal" item.
The probe is 8", or so, long. I pull it and clean it up after each use.
