I'm doing my first ever pork shoulder - pulled pork and need an estimate. I'll be doing a 9-10# shoulder that's at 45° IT, put into a 225-230°F smoker. How long should I plan for it to get to 140°F IT? (PS, don't worry, the IT we I'll be way above that when it's done.)

It should reach that IT in all of 4 hours or so..then it's the 12 hours to get to 205f that is a long wait... ;)

Tom's got you covered...about 4 hours. Wrapping in foil at 165 will help speed up through the stall if hard bark isn't a huge deal for you. Good luck!

Thanks Tom! I'm smoking it the late afternoon of the 3'rd and then double foiling it and putting it in the oven overnight. Figuring 14 hrs total. Then pulling it and putting it in the cooler while we go play 9 holes of golf. I'll pull and serve when I get home. (It's Jeff's "Whoops" method.)

running a higher temp like 275 could also speed it along.

My brother-in-law who's been smoking for decades is coming so I'm sure I'll get a critique after lunch ;-)
I'll post another thread with some pictures after.

If your not injecting the shoulder, and are concerned about the 4/140 rule then I wouldn't worry to much, but like mentioned above it should be there in a few hours. As long as your not peeking to much.

Chris

Good luck!

I hope the weather is good for ya. This rainy muggy stuff has got to go! <Down here in the Fox Valley it just rains enough to make it even more muggy>

Ha, I'm putting in a new lawn, 500# of seeds worth. I went out and bought enough hoses and sprinkles to sink a battleship. With all this rain I haven't used them once. I'm just hoping the seed doesn't rot.

Oof.

I have to say the rain is good for my garden..but that's a bit of a concern :)

<I got a buncha heirloom tomatoes this year. Hoping to make 4 gallons of salsa to can. Smoked Salsa is awesome stuff!>

We quit doing the veg garden. Too much work weeding. We would go camping for 4-7 days to come home to a weed garden. We do flowers now.

we gave up on the veg garden as well. results were incredibly variable but mostly big plants with little fruit very late.

Nice yard Carven!

We got pear trees too...if yer over this way when they're ready..you can probably have some ;)

We trimmed them some, but most years there is so much fruit we fill garbage cans full to get rid of it.
