I am going try smoking cheese for the first time tomorrow. Does it matter if the cheese is cold when i start to smoke it or do i need to let it warm up to room temp before starting? Can I put it on the smoker right out of the refridgerator?
You can smoke it straight out of the fridge, it will be fine. No need to let it warm up. It should be plenty cold enough up there to not worry about it but down here I will put it in the freezer for about an hour before smoking just to help keep it from melting so being cold doesn't matter.
Thanks! Yeah its going to get down to a balmy 27 degrees in Green Bay tonight. Going to attempt some fresh cheese curds made this morning. I got them directly from the cheese factory right out of the mixing vat. Also I am going to throw on some mild cheddar, provolone, cheddar and string cheese that was made yesterday morning.
