Question on drying Summer Sausage

I have a question, Can you hang the summer sausage on a drying rack at 10:00pm and let it dry over night and put in the smoker 6:00am the next morning. or is this to much drying time?

Need more info, is this cure #1 or 2 or what do you have going on?? give us more info on what recipe you are using.

Why do you want to dry the summer sausage. I would follow ryteks instructions if you are making one of his recipe's.
 
It says to dry for 2 to 3 hours, I dont want to get up at 3am to put it on a drying rack to start smoking a 6am.
 
You'll be fine.. Take the sausage to 154 internal temp. Not 152..... Dont know why ryteck likes to use a heavy smudge of smoke... Must like it real smokey....
