Question -First time packer w/butcher paper

Team- need some help and input on how much time I need to account for to smoke this 10lb packer which I plan on wrapping with butcher paper

Brisket Packer 10lbs after trimmed
Traeger Pro 22 plan to leave it on smoke setting for 6 hours, and then increase the temp to 250. Once the IT reached 160, I plan to wrap it with butcher paper. After that I’m lost. Like to serve this at 1pm.

Thoughts? I’ve never had luck smoking a brisket.
 
I have only done a couple of briskets, seems like they always take at least 12 hours. I usually cook them at 250 - 275 range and wrap in butcher paper after about 6 hours of smoke or 165ish IT.
 
I did an 8lb packer today. My smoker was between 250-275. It took 4 hrs to reach 170, then I wrapped in butcher paper. 3 hrs later, temp was 203 and I wrapped in towels. 1.5 hrs later, temp was still at 165, and i sliced it. It was perfect!
