Queso Chicken Enchilada Recipe?

I am wanting to do some queso chicken enchilada's tomorrow. I have that White Queso from Sam's that is quite good. Been looking at recipes and just cant figure out how I want to do them? I will be using HEB low carb tortilla's which are actually pretty good and rotisserie chicken. Use some sour cream? Rotel? Should I add the queso before cooking or just over top on plate when done? Any idea's s or suggestions? I seem to be lost on this one.

Based on the Tex Mex books I have the enchilada base is protein, cheese, and onion. You can add more but needs to have these 3. If I was running this I'd make 4-6 of them to throw in casserole to bake with sauce on top. I would build them with chicken, onion, canned green chilies, and shredded colby jack.
 
My go to for chicken or turkey enchiladas is Campbells cream of celery soup .

Add the soup

Mix , heat through and season to taste

hominy to the mixture .

These use that white queso. People are constantly on me to make these.

Those look so good.....I am going to make that for dinner tonight...even with the black olive, an old hispanic tradition. Thank you for the idea and pictures.

I use this recipe with canned green enchilada sauce, and flour tortillas. But red is good too, just on a green kick. Im sure they would be good covered in queso. Ive used rotisserie, breasts, thighs - they all work.

Thanks . If you like the corn flavor for these , and are using flour tortillas , add some hominy or fritos to the mix . Masa harina works too , but that thickens it up some . The fritos will disolve , and add great corn flavor .

Yup , black olives , green chili , corn , whatever profile you like .

I cut recipe to 1/4. May have to adjust xanthan. I forgot I made some Keto Cornbread to make a squash casserole and doing it today. I going to put some of the chicken in there than do the enchiladas tomorrow.
