The wife and I went to a food festival and discovered this German cheese that we both loved - Its similar is texture to cream cheese but without the sweetness.
We purchased some and then discussed how good this would work in poppers.
Wife cooked up some local pork sausage and mixed that with the cheese to put in poppers. I wrapped mine in bacon and on the smoker with mesquite wood for 45 minutes at 250.
I have to say these were epic. None of the cheese got so hot as to cook out and stay firm enough to really enjoy. If you can find it near you at a local dairy I really recommend you try it.
These went on after I put a pork butt on the smoker - both turned out great.
