this was my weekend meat fest. fired up the uds friday with charcoal and a hunk of local hard wood from my wood pile. rubbed this 9lb picnic up with my homade sweet spicy rub.





after 4-5 hrs i popped in the therm to check. 140.



about 9pm the temps was good so i foiled it and popped in the oven to sit for a while.




if anybody has a recipe that tops pork that falls clean from the bone send it to me because it will be the key to untold fortunes. had sammies with cheese and BBQ and chopped pickeled jalapenos. cheesy corn and carrots and mashed taters.









well it lasted all weekend through yesterday.




you may wonder why i posted a shot of an omelette. its stuffed with cheese and pork lol. topped with grilled green onion and mushrooms and salsa. yummy.

That's one of the best picnic cuts I've seen in a awhile, grat looking Q. It's all good my friend.
 
I just finished lunch, and my mouth is watering like I haven't eaten in week. Nice looking ham - breakfast looked mighty tasty, too!

took it to 160 before foiling.

thanks folks. doing a blade roast in the new smoke box tomorrow.
 
Looks great! Man nothing like being able to make a bunch of different things with a huge roast like that. Those sandwiches sound good with the peppers!
 
Looks great big game, I love working with picnincs. You just inspired me to get one and do for one of my next smokes, on sale right now for .99lb.
Gotta give you points for including the breakfast. I love using leftovers in dishes, it's like a new smoke dish that you didn't have to work as hard for.
 
ya i sure love the big cooks. in the summer i sometimes have 4-5 different leftovers in the fridge at a time.
