So my motorcycle club is thinking about doing a Q-off next summer.I am in charge of 'figuring it out". 

Here is what I am wondering:

entry fee??

we provide the meat?? 

we provide the smoker??

figure a cash prise 1st -3rd with trophy???

ANY thoughts would be awesome!!
 
Generally, the competition organization provides the meat so that competitors don't start out with an unfair advantage/disadvantage.  That would probably mean entry fees if you don't have a sponsor.  I assume everyone will provide their own fuels, spices, sauces, foil & other supplies, etc.  If not, then you've got to add that in as well.

You could also charge "voters"; they could buy a plate with samples from the competitors (= get to enjoy some great Q) and help with the judging by casting ballots.  This spreads the cost over a larger group.

I would consider a combination of the two.  Figure out how many competitors will participate (or you will allow), and how many people you can reasonably feed.  Then work the numbers backward so you can cover expenses and award prize money. 

I don't know how serious you want to be, but you're going to have to adopt some rules of some kind so everyone knows what is expected and how it will be judged.
