Hello everyone...I had half a butt leftover so I decided to try some pulled pork today. First time smoking a butt. I was speaking with drewham last night about ideas and here is the fruition. I started by cutting the hard fat and liberally spreading turbinado, pepper, onion powder, garlic powder, smoked paprika, and course salt.
. The first picture is last night, the second the meat after sitting in the fridge uncovered. I cooked it at 250 till it hit 145. I started at 8 this morning and it hit 145 about 5 hours later. I placed my homemade bbq sauce on it and covered the pan with saran wrap and aluminum and threw it back in the smoker.

this is after. Then I threw it back in the smoker...I got ansy and pulled the meat at 190. It was past 6 and I had a hungry family.
I then pulled it... It pulled beautifully
Earlier in the day I made a cabbage slaw with cabbage, raddish, red onion, carrots, red wine vinegar, mayo, gojuchang, salt, pepper, and sugar and a little honey. I cut a fresh jalapeno thin on my mandolin and assembled my tacos, topping them with a little bit of my homemade bbq sauce again.
They were literally the best thing I've ever smoked, never have I ever seen my wife ravish something like that. And to top it off I made a carrot cheesecake for dessert
