Next Tuesday I am going away. I will be coming back early Friday morning. I need to cook two pork butts for sat. I will be cooking this on Friday. Normally I would put the rub on the pork butt the night before and put it in the fridge. I will not be here so cant do that cause I wont be home.

Do you think its better to put the rub on Monday night and let it sit in the fridge till Friday. Or should I just rub it on Friday and put it on the smoker.
 
Honestly, and there will always be those for and against it etc etc. I do it the day of normally, no mustard, put the rub on one side..let it sit for a while <about 30-60 minutes> flip..put the rub on the other side..and start getting the smoker going!

I think you'll be fine doing it the day of. Just sprinkle a bit on the meat when you pull it. I'd be iffy having meat in the fridge uncovered that long, it might pick up off flavours. <Or you'll have your fridge smelling like the rub etc>
