I'm sorry to be late but I will throw my 2 cents in anyway. You need to cut the skin and as much fat as possible to get as much great tasting bark as possible. I waver back and forward between foiling when there is nice colour and not foiling at all. I like the texture of the pork when I foil and the bark is good but not great. When I don't foil, the texture of the pork is good but not as good as the foiled pork and the bark is great. I just can't make up my mind!
Point for a great first result.
