Set in the fridge 3 days prior, soaked in cold water the night before.

Put rub on the morning of- usually do it the night before, but it wasn't thawed, so there ya go.

Put in the pit at 9:30 AM, uncovered.

Put in pan at 2:10, foil over the top.

Pulled at 8:30ish- internal temp was between 190 and 200 in every place i checked.

Had put some cayenne in it, got a little bit of a kick to it.

We'll see how it goes at my youngest's birthday party- hopefully everybody likes it.
