Reader's digest version..........

Daa Butt! It had been rubbed and in the reefer for 2 days. You could smell itr without even opening the door!

Preheat to 275, lite the Oval full of pecan, apple & Corn cob. Set the chamber temp down to average about 210.

26 hours later, 203 IT, The bark was falling off on the floor, I just threw it in the trash......NOT!! It was so moist, tender, juicy, pop a piece of that fat cap in your mouth and it melted before I could chew.

Pulled that pork, mighty tastee! Added about 4 TBSP of finishing sauce. My version of JJ's famous! Mixed it well and into the reefer for 2 days till its sammie time.....

Sammies tomorrow...... Of course I didn't taste it to make sure the taste was right on!!

That is it. I bet tomorrow there will not be time or a chance for a picture. I mean like I am gonna get my BBQ sauce all over the camera. LOL

Gotta tell you, I had forgot how good this is. Hope I can find some buns tomorrow.
 
Looks fantastic!! With you on popping some of that fat cap in my mouth immediately. I’m doing 3 butts tomorrow and can’t wait for some of that melty goodness.
 
Yummm. Pulled a butt out of the freezer today - some pulled pork is in the near future.
