Edit: I think I discovered the problem. I put the meat on the second highest rack and a cookie sheet with tin foil just below it on the third highest rack. I removed the sheet and the temperature seems to be registering correctly once again. I can only assume that the cookie sheet (a half sheet, so about 18" long) was just too big so that only a bit of heat was able to rush past it and go to the thermometer probe and short cycle the oven. What a waste of perfectly good meat.

I’ve owned the 140G for about 4 months now and it’s always ran a bit hot when compared to my Thermoworks Dot probe. Meaning, if I put in 225 degrees on the smoker, it might actually go to 240.

last night I was attempting an overnight pork shoulder cook. Put the temperature in at 225, didn’t bother using the Dot since I know the smoker runs a bit hot.

this morning I checked and the internal temp of the pork was only 120 after 8 hours of smoking. I put in my Dot and it was showing only 140 degrees inside the smoker.

I tried ramping the temp up to 275, and the masterbuilt probe said it was at 275, but the Dot only said 160. Both probes are in the same area so that’s not the issue. Note: to confirm the blue dot I also used an additional temperature probe from Inkbird and it was the same temp as the blue dot.

Besides the pork being trash, what’s wrong with the smoker? The probe shows roughly the same temperature as whatever the “BOT” (bottom) setting shows on the masterbuilt display.

essentially, are there two probes that come with the 140G? I’m aware of the one that’s an actual probe at the top, but is there one on the bottom as well? It seems odd that BOTH of those are registering the “correct” temperature but it’s about 100 degrees higher than what it actually is.

Put your temp measuring probe next to the smoker's temp measuring probe..
Air flow in a smoker can channel... different temps across the cooking surface....

Yeah, I noticed that the Thermoworks probe was about 3" inside of the Masterbuilt probe. However, it still seems like it was short cycling. I don't think enough heat was able to get around the cookie sheet and cook the pork butt.
