I bought a 7 pound boneless prime rib roast that I want to smoke on Sunday, problem is my daughter and her husband are coming at 4:30PM and I have no idea how long it will take to cook! I have been checking out recipes on ALOT of websites and I have found from 2 1/2 hours to 7 hours???? I use my trusty Weber with the Smokenator and I usually run about 225 degrees if that helps. I want to get it off about 4:30 and then let it rest for a half hour or so... I also like it medium, so I'm thinking I want to take it off at about 145 degrees? Thanks for any help!!

THanks for the reply Dan! I was gonna put the rub on and wrap it overnight but I read in the Weber cookbook that it should only be on for a couple of hours before cooking?? What do you think??
