So i started a 13lb Prime whole brisket last night at 11 ish...

Rubbed up with salt, pepper. montreal, onion and paprika..

Brisket at 10am 155 IT..This Flame Boss 300temp controller makes the over night cook on a WSM , painless... Held steady all night..

Came out better than any brisket I have tried in the past..Buying prime meat and having temp control throughout the cook helps :D Thanks for looking... Happy smoking !!
 
Ah yes, Kirkland (aka Costco) is the only place near me that regularly stocks Prime brisket. And at a reasonable price. I also fully believe in the use of a temp regulator such as my BBQ Guru. Did you wrap at the stall? Came out nice.

I no longer foil anything.. Straight thru on the smoker with hickory and apple wood chunks..

HELL YES!!!

Way to multi-task with the WSM! I am loving the output!

I have an early return home today and stopping off at my friend’s joint in North Texas, Primier Grilling, to snag a 22” bullet they are nearly giving away! I have to decide on a fan so my FireBoard can control the fan using the bullet.

All you guys on these charcoal bullet smokers and the results you’re getting not to even mention that char and smoke flavor is an option we all need! The tiny experiment with my daughter’s Brinkmann bullet sold me!

Definite Point, Like, Clink and everything in between Brother!

That is a Smoke Bomb right there my friend!
