So i started a 13lb Prime whole brisket last night at 11 ish...
Rubbed up with salt, pepper. montreal, onion and paprika..
Brisket at 10am 155 IT..This Flame Boss 300temp controller makes the over night cook on a WSM , painless... Held steady all night..
Threw some st louis ribs on at 10am brisket check..
Ribs at 2 hours. Time for a spritz...AC and AJ
Ribs at 3 hours
Ribs at 4 hours and brisket at 14 hours
Ribs sauced and into oven for 30 minuts... Sliced and done..
Brisket rested for an hour and the sliced...
Came out better than any brisket I have tried in the past..Buying prime meat and having temp control throughout the cook helps :D Thanks for looking... Happy smoking !!
