Most of the seasoning mixes I see on line are for 25 pound batches. Can they be used for smaller 5 pound batches. I didn't know if they already have the cure mixed in with them.
Cure not mixed in any I’ve used. Just need to do the math and have a good scale. For very light stuff I use my balance beam reloading scale that will accurately weigh the smallest ingredient.
If you look around Pittsburg spice and others have some variations of small pre packs for 5 and 10 lb batches. That way you wont need any math classes. And or get stuck with extra something you may not care for
Thanks for the replies guys, I was hoping that was the way it is. I have a good scale already. I forgot to ask the second part of what I wanted to know. If you don't use it all do you just vacuum seal it to keep it from going bad?
if it's in a plastic container with a screw on lid (like Sausage Maker) ... I cut the zip lock of a bag... put the bottom of the bag down in the container... drape the top out over the sides... put some rice down in the bag... then screw the top on with the bag still hanging out... This way you still have the container with the mix ratio on it...
