Took some leftover pp from the big weekend and put together some homemade taco seasoning, siracha aioli, some cheddar jack blend, and a little purple cabbage. Simple and delicious, and also a great way to use up some of that pp goodness for something beside sammies!

Green Chile Sauce

Makes about 2 Cups relatively mild sauce, depending on Jalapenos. Add Hotter Chiles to your taste.

2Tabs Oil
1C Diced Onion
4ea Cloves Garlic
4ea Pablano Peppers
4ea Jalapeño Peppers*
8oz New Mexican or Anaheim Chiles**
1/2tsp Cumin
1/2tsp Black Pepper
1/2tsp Marjoram or Oregano
1ea Chicken Bouillon Cube
1C Water
Small Handful Cilantro, finely minced.
1/4C Heavy Cream

Roast and peel chiles, Chop fine.
Saute onion and garlic until soft and slightly golden in a 12" pan.
Place all but Cilantro and Cream in the pan and simmer until soft and water evaporates.
Puree the vegetables until smooth. Add a little water if needed. If too thin return to pan and reduce.
Add Cilantro and cream, stir to combine.
Season to taste.
* If jalapeños are mild add more and use less Pablano.
** Fresh Chiles are best but use Canned Green Chiles, out of season.

Looks like that would be a good addition to this for sure, I’ll have to give that a try next time. Thanks!
 
Funny I did this Sunday! I just crisp mine up a bit in the skillet before adding some seasonings and a bit of water. <I use storebought seasoning...I know! I know!>

Nothing wrong with that at all, I would have done the same but I didn’t have store bought lol. I agree crisping in the skillet is the way to go, but after working late I completely cheated and used the microwave!

You should try using Pulled Pork for making fried rice...another good hit round here! Understand ya on the quick heating though, it's generally what I do for heating up the stuff if it's for sammies.

I’ll try that for sure, I can’t believe I haven’t thought of that before. I’m always looking for new ways to use pp.

Nice tacos. My stomach is already growling.

Leftover pulled pork goes great with tacos. I like to make a mango salsa when making them.
 
Thanks, mango salsa is definitely something I’m gonna have to try with these, sounds like they would pair well.
 
We just put a slice of avocado and a little pico de Gallo in the tortilla with our leftover PP. Quick, simple and tasty.

Also like the PP in a corn tortilla with a little sauerkraut. Mmmmmm
