Mine failed again. They where from that same package. Might just be the meat. Used the Barrel grill this time. Took them to about 195 and where tough and dry. Was fun to cook them though.
Shag bark off of a hickory , a little sweet/heat rub and grill to desired temp, never poked mine to see what temp but,1/2"-3/4" and never tough, I have tried the thick cut and they end up tough 50% of the time
