SmokinAl, I ran them at 225-235 I was mopping them so the temp would spike to 300 when I had the lid off but you can pull it back down fast once you put the lid back on I wasn't concerned about internal temp because I knew I was beyond done but I wanted to get the fat crispy with just a touch of char.They turned out really good.They look delicious!
What temp did you take them to?
