Pork sirloins are often on sale around here, so I tend to snag them based on low price. Can these be used for sausage? I assume I need to add some sort of fat to get around 80/20 ratio?

Can absolutely be used in sausage. They are very lean so yes you need to add good fat but you can also make some amazing Polish sausage that needs 75% lean meat and 25% fat and fatty meat. If the sirloin is cheap buy some.
The fat to lean percentage varies depending on the amount of trim when you buy it .
Whole untrimmed pork sirloin can be as much as 16 to 22 % .
I buy untrimmed pork cushions that come from the shoulder area . Resembles the picnic section . Untrimmed they run about 16 % fat to lean . I use it for sausage with no added fat .
So just depends on what you're buying if you need to add fat or not .
Half boneless pork loins go on sale regularly around here for less than $2.00/lb. I use them mostly in my homemade dogfood recipe, but since I have a source for free pork fat, I'm going to use them for sausage, as well. The ones I have bought are very lean so I'm thinking I would add 20% fat and not worry about the little bit of fat left on them from the butchering...
