Pork sirloins are often on sale around here, so I tend to snag them based on low price. Can these be used for sausage? I assume I need to add some sort of fat to get around 80/20 ratio?

Can absolutely be used in sausage. They are very lean so yes you need to add good fat but you can also make some amazing Polish sausage that needs 75% lean meat and 25% fat and fatty meat.
