Just put a pork shoulder on the WSM. We'll see how it turns out! Probably in about 20 hours. Low and slow!

I've had 10-12 hours at that temp and similar sized buts.. but never 20! HAHA good luck and no matter how long it takes it'll be worth it!

Looks good. 8.5 - 9.0 is my target size for Butts. Every cooker cooks different, My MB 560 at 225 would take about 16 hrs. approaching 17 hrs depending how long my stall is.

Cheers I’ll drink one also. Are you planning on wrapping it at the stall or letting it ride? Hit it with some finishing sauce when it’s done too. It will set it over the edge

8.5 pound pork shoulder = about 18 hours at 220 degrees. It's resting right now. Next to shred it and add the finishing sauce.

Ok, here goes..
