we love tacos and enchiladas - so last night used a portion of the pork loin for pork enchiladas.
I mixed cubed smoked pork with cheese, green onion, black beans, and enchilada sauce. then rolled flour tortillas (just dont care for the corn ones). then baked un covered till the tortillas started to turn golden, pulled, sauce and cheesed, covered, bake a while till melty, then uncover till chesse get a touch of color. turned out great!
