What cuts of pork would have similar fat content to a Boston butt? Country style ribs? Looking for alternatives to use with wild game when butts aren't on sale.

if im not mistaken country style ribs are just butts that have been run through a band saw and trimmed a bit. i would think that butts would be cheaper than country style at most any time. i was talking with a local butcher and he says he gets 75-25 pork trim in 75# boxes for about half of what pork butt typically sells for at the time and its just all the scraps and pieces that are mis cut. I have bought some from him and I would say its a little closer to 70/30, but its pretty darn affordable for making sausage.

edit: they are close to the shoulder and have part of the shoulder blade in them, but are not actually part of the butt. sorry.
