Pork butts and pork pattties!!!!

​Well todays adventure is 15 pounds of pork butts and some pork patties.   Wife likes to take reduced fat ground pork and add sautéed onions, celery and garlic to it.  I then smoke the patties at 225 for about 1 hour or so. Great on buns with some coleslaw, little bbq sauce and some small onion rings.  Lunch today.  The butts went on about 5 am.  I like to do them in pan with dark beer for basting.  As liquid builds up I remove some and keep it as that goes in the North Carolina style mustard based sauce I make.  Many hours to go so "to be continued".......

Never tried shoulders in a pan before but able to keep the drippings seems like a perk. Looks like a great smoke and planned lunch and hope some more pics follow!
 
Great start!

I like to do butts in a pan too!

And as you said you do need to keep taking the juice out or it will overflow!

Thanks all and it is tough not to munch as you shred.  One has to make sure it tastes good, right?  LOL
