Well todays adventure is 15 pounds of pork butts and some pork patties. Wife likes to take reduced fat ground pork and add sautéed onions, celery and garlic to it. I then smoke the patties at 225 for about 1 hour or so. Great on buns with some coleslaw, little bbq sauce and some small onion rings. Lunch today. The butts went on about 5 am. I like to do them in pan with dark beer for basting. As liquid builds up I remove some and keep it as that goes in the North Carolina style mustard based sauce I make.
