I had a small piece of pork butt....wanted a (relatively) quick dinner so i prep-ed as for pulled pork and tossed it in the oven until 195 F for slicing. My kid, who is familiar and loves pulled pork, asked me "what meat is this....tastes so good and is so tender". I realized most people (non-smokers) don't cook butts to such temps, unless is for pulled pork. They would cook it like a normal roast. Or am I wrong?
 
Probably.... Then they are somewhat tough and the collagen hasn't broken down... I like pork cooked like you did it...
 
The "non smokers" normally do them in crock pots.Which I have done before also with satisfactory results.Butt is best slow roasted though,smoked or not.
 
I agree with you , but , I used to do 185 / 190 then slice . I just did a de boned butt , netted and hung in the smoker ( no smoke ) to 145 . Let rest then sliced . I had the post where I made it into a stuffed calzone type of sandwich . The pork by itself was really good . I didn't want to post a link here , but if you are interested you can find it .
 
Seems to be a versatile cut that can be prepared many ways. I've thrown butt in a pressure cooker with a blend of beans for 70 minutes and it turns out quite well for a quick meal.
 
I like Pig Butts and i cannot lie...

Country Style Ribs (CSR) come form almost the same spot as the Pork Butt. Hell they share the shoulder blade bone.

I love eating CSR's and rarely do I hear of people cooking to 205F+ temps. I would eat them that way but you usually get them more in the ballpark of the temp you cooked your strips too :)
 
Aaron,I guess you're gearing up to do ~60 lbs.You gonna have decent weather?
 
Actually about 35 before i cut off about 5-6 lbs of fat caps. As for the weather its snowing here in NC! I'm going to smoke in the snow tomorrow if i have to...done it before!!!

Thought you were doing 4.We're supposed to get a skiff - 1/2" here in the mtns.Staying to the east of us.
