Pork Butt for Pulled Pork How Bad Did I Ruin It?

Well... bought a 10lb butt for smoking in my traeger for the first time.

Seasoned it injected it w Apple juice and Franks red hot mixture... let sit in refrigerator in bath of secret sauce for 6 hrs put it on at 1 am at 250. Got up this am at 0900 go out and internal temp of meat is 220!!!

I immediately pull meat off, foil it, it’s in the cooler now.

How bad is it the internal temp got to 220?

It doesn’t seem to be dry... I had a pan of water adjacent to the pork to create higher humidity throughout the night. That was all dried up though.

I’m afraid the pork will all be grey and mush.
 
Update: just took out of cooler to inspect... it is extremely juicy wondering about the tenderness... I can push finger into meat... bone isn’t falling off but sure I could pull meat off... putting it back in cooler... wish me luck! May have gotten lucky on this one!
 
I think one or both of your therms are off. Sounds like your pit temp was much higher than 250, and at 220 IT the bone should have just fallen out. You wouldn't even have to pull the pork, it should be just about mush. So I would check your therms in boiling water (212 degrees) & ice water 932-33 degrees).

I never thought to cross reference it with another thermometer... I am putting it in foil and back on temp was just 165 when I used my other digital... wrapping it in foil with a little Apple juice at bottom want to ensure that it is done... didn’t expect it to cook so quick. pulling off at 190.
 
I’m pretty positive my temperature probe that was sitting in meat all night was getting a bad reading from being in the grill itself!!!! Thanks smokinAl you’re a lifesaver!!!

P.s I was going to guess therm was out we've all been there :rolleyes: hahaha.
