So I have always (3 or 4 times) butterflied my pork butt before smoking. It cuts down on cook time and gives much more surface area for the rub. So I started to cut away Saturday but the bone got in the way. Got it butterflied but it was no where near even on either side. At this point I figured I'd just remove the bone but even then one side was much thicker than the other, with another piece kind of just hanging out there. So I folded it up to look like a normal butt, rubbed it and put it on the smoker. About an hour in and I thought maybe I should have tied it up just in case. Left it alone for 3 hours then checked to see if it needed spritzed or tied up. Nope, looked good. Another couple of hours and it was time to wrap. Total grate time was only about 9 hours. Let it rest for about two hours and it was good to go. Best butt I've done yet. Smoked a sweet potato with olive oil and SPG rub. But forgot the cabbage.

I haven't done a bone in butt in many years. I usually trim down and take a scrap for pulled pork.
 
What's so nice is that butts are the most forgiving meat when it comes to smoking. The end result speaks for itself. BTW: Costco usually sells butts, 2 in a cryo-pak and they are boneless.
 
Looks great, I never butterflied a butt before, may have to try. When I first read the title to the post I thought this was going to be a post about everything going south. Glad to hear it was all good
 
I do my pulled pork in like 1lb chunks for the reasons you mentioned - more rub, more smoke, more bark. I can have pulled pork from 0-to-sandwich in like... 4-5 hours. I love it and it's the best pulled pork I've done, it's my go-to now.
