I have mine rubbed and wrapped for tomorrow morning. I have wrapped in the past, but going to try it without wrapping tomorrow. I am also going to try a finishing sauce for the first time.

I injected and rubbed rest for 24 hours then smoke with cherry and hickory and a little beach smoker temp started out at 190 for six hours then 225 for 10 hours mopping evey hour pulled off when IT was 195 rest for hour then pulled!

Would you mind helping me on a pork butt? Im doing a single 8 lb. butt in an MES. I have it rubbed down and in the fridge resting now. I’m a new smoker and new to this forum. I have done one before and I had smoked it at 225-240 at 1.5 hrs per pound. Does that sound right? I have a meat probe that reads internal temp but I don’t know how accurate it is. I need to get a better one. Is an internal temp at 205 sound right? Any help is greatly appreciated! Also, is there a secret to smoking these several hours before it’s going to be served? Any reheating suggestions? Thanks so much!

Yes no problem 225 is a good temp looking around 8-9 hours depends on stall you could wrap it when IT is 165 then bump smoker up to 230-240 if you are short on time if not just let it ride I spray every hour with a mix of apple juice and apple cider vinegar 195-200 a good IT for Butt let it rest for 45 mins before pulling. For reheat put it in crock pot on low with some apple juice !
