Just trimmed the meat off some shoulder roast for sausage,  I left a little meat around  bones, what can I do with them?
 
Smoke for a couple hours low & slow with hickory & apple, then throw in a stock pot for smoked pork stock. You can freeze stock indefinitely in plastic containers, or, process it in a pressure-canner.
