Used Pops brining method for the exception of brown sugar I opted for maple sugar, and this has a few brown spots that don't look right to me hate to throw it away the brine mix does not smell rancid at all. Has this happened to anyone else? Do you think this is safe to eat? Any feedback would be Great. Thanks Rick

Yup, Doug has you covered. It’s oxidation and will 100% turn beautifully red when cooked. No worries.
