Pork belly

I smoked a 2 1/2 lb piece of pork belly in the MES for about 3 hrs and then transferred it to the Oki Joe offset. THe meat was 158 when it went into the offset and cooked indirect for about an hour. Temp got up to 180F. Was very flavourful (been using maple wood chips) and tender. Baked potatoes the same way. When the potatoes were transferred to the offset, i put them on the coals. All yummy
