I have a small about 3 lb piece of pork belly. I have thus far used the MES 30 to cook them. I want to cook it indirect today using my charcoal grill. I dont have the time for a long slow cook but should for an indirect cook.

About how long to cook considering i us a 3 zonw fire (Hot-Cold-Hot) and put meat in cold zone.

Depends on the temperature of the cold zone.. Do you want it fully cooked "ready to eat" belly ??? Or are you going to finish it in the frying pan ???

I want it ready to eat. I use get the hot zones up between 350 and 400 as if I was cooking it in the oven and want the cold zone 325 I think. I put cold coals down in hot zone and then hot on top to get nice fire going.

I put it on indirect for 1 1/2 hours & used Jack Daniels wood chips. Got to 187 before I pulled it off and sliced (thick) and fried on the griddle.
