Pork Belly = Jamaican Sandwich + Fried Potato and Peppers

Pork Belly = Jamaican Sandwich + Fried Potato and Peppers

Smoked a Pork Belly coated with Lane's " Q-Nami " over mix of Hickory and Mesquite chunks. 2 1/2 hours at 225-250 deg. Than 2 1/2 hours at 300 deg. +/-. Than in fridge to set and cool next day for slicing.

- Pork belly sliced thin for sandwiches ( kept 3 big pieces for 1 sandwich also ).
- Made a sauce with 2 parts Pineapple Jerk sauce and 1 part Mayo, to be poured over the meat in the sandwich.

- Bread is Jamaican Coco bread, I made another batch for this , great coconut milk bread, great for filling and not breaking
- Side , is Fried Potatoes in bacon fat ,with Orange bell peppers, onions, and Jalapenos

So outside light the BBQ to cook . Clean off the snow , only an inch or so last night.
In 7 weeks we have had 7 bad storms , I need to see some palm trees and hear air conditioners, lol

Fry the potatoes and peppers in bacon fat, in a pan on the BBQ heat up the belly before the pan fry with more Q-Nami seasoning

Will this is going make my sandwich jerk sauce. When veg are ready, change places and warm up the Coco bread

All ready and plate it up .
Built the Sandwich with a layer of my jalapeno Jelly, lettuce, the thin sliced Belly ( other sandwich was with 3 big thick pieces of the belly )
thin slices of Jalapeno sticks. poured on the Jerk Mayo, 3 slabs of Mozza , 2 long sandwich pickles and red onions.

Of coarse I had the Sandwich with the thick slices of the belly and half of the thin sliced one , Mona only wanted half of one . So why waste it .

Looks fantastic David! I’m all about Jamaican flavors! Not sure I’ll make it back there again but I’ve loved the flavors locally multiple times.

We also love a lot of the Jamaican flavors, we would love to get back there . We were married there many years ago.

Great sandwich with lots of combining flavors , but it worked for me
From the jerk mayo to the Jalapeno jelly to the rich pork belly . Think i'm going in for another , lol

It was a great plate of food, but sometimes I think I go a little long on the posts . Instead of right to the point.
