The pork belly is cubed and in the Traeger Love Chamber!

Was debating on how to treat them so I settled on cubed and 225 after having them much lower and in strips. I tossed the trim pieces on also!

Oh man... Just watch those things disappear!
I opted for the sweetest seasoning in the arsenal!

I’ll add honey with a tic of sauce later. Have to try some first. With the Pecan Rub they may be spot on with sweetness. We Texians are not huge on the sweet but pork candy kinda necessitates sweet!

I’ll share! North Texas, roll out!

We split the pile about 1/3 out to go back with the honey and sauce. We weren’t sure which way we’d prefer so we did both!

As it turned out we opt for the naked with a decent sweet rub as the only seasoning. Which John Henry’s Pecan Rub was ideal!

Oh my...look at those Smokey, sticky, sweet, crispy little cubes of goodness! I could eat a whole plate of those! Maybe with a little greenery nothing else needed what so ever! :p

I put that foreboard through its paces! I need to buy a fan setup and use it to control the flow on the Napoleon Apollo charcoal smoker for a long cook.
