Well, I couldn't believe it. I walked into my local Safeway this morning, and lo and behold... I saw pork belly. Pork belly is never... and I mean, never seen around here unless it's at our local butcher. The sight alone gave me the tingles. So I couldn't help my self.

Hit it with some honey hog, a good layer of course black pepper in between and then the treagers cherry rub. Let it roll at around 225 for most of the day.

Cut and put it in the pan with some brown sugar, champion blend sauce by blues hog and some tiger sauce and of course the liquid gold.

Awesome!! Looks like it came out Killer!! Every now and then my SW has PB but it is usually 1-2" thick slices. Never the whole piece but I can deal with that, Hahaha!!

Very nice work. And to add, our Safeway over here has been carrying premium pork belly that are around 7# each for about a year now. I keep the freezer stocked.

Thanks, ya the ones I saw were pretty small but worked out pretty good for a quick Saturday bite.

Has anyone compared smoking the belly and then cubing to cubing and then smoking? I cube first, but it may be a Ford vs. Chevy thing.

Are there any meat scientists out there?

Seen alot of people cube & then smoke. I've never done it that way myself, I guess I just like to keep things whole most of the time. No rhyme or reason to my madness, just personal preference I suppose. Now that belly is more available to me, I may have to explore more ways here soon. 👍

I cube then smoke figuring there is more surface area for the rub. I haven't smoked then cubed, though so can't say if there is any difference.
